Hearty Lentil Soup

What you need

  • Olive oil 2 teaspoons.
  • Onion 1 large, finely diced.
  • Carrot 1, peeled and finely chopped.
  • Celery 1 stalk, finely diced.
  • Crushed garlic 2 teaspoons.
  • Lean bacon 100g, diced and dry-fried.
  • Chicken or vegetarian stock 2 litres.
  • Chopped tomatoes 2 x 400g cans.
  • Red lentils 1 cup.
  • Salt and pepper to taste.
  • Chopped fresh coriander or parsley to serve.

Preparation time: 15 minutes
Cooking time: 30 - 40 minutes


  • In a large saucepan, cook onion, carrot, celery and garlic together in oil for a few minutes until soft.
  • Add all other ingredients except lemon juice and coriander and simmer for around 30 - 40 minutes or until lentils are cooked. Add coriander or parsley just prior to serving.
