Chocolate Date and Walnut Balls
What you need
- Pitted dates 2 cups.
- Grated orange rind of one orange.
- Walnuts 1 cup.
- Good quality dark chocolate 100g.
Preparation time: 45 minutes
Method
- Chop dates roughly, place in a bowl and microwave on high for 30 seconds.
- Transfer to food processor, add orange rind and process to a finely chopped paste; transfer this to a bowl.
- Chop walnuts finely by hand or using a food processor; set 2 tablespoons of these aside. Add the rest to the dates and knead well to combine. Using cold wet hands, roll into small balls (the mixture should make 20). Set aside.
- Meanwhile, break or chop chocolate into small pieces in a bowl. Melt using one of the methods listed below.
- Using a cocktail fork or skewer, dip each ball in the chocolate and turn to ensure a complete cover. Lift from bowl, allow any excess to run off, then transfer to wax or greaseproof paper (on top of a plate or board).
- Sprinkle the tops with remaining walnuts and refrigerate to cool.
To melt chocolate:
Microwave: heat for 2 minutes on second to lowest setting. Stir,
then heat for a further minute. Stir then keep heating in this way
until the chocolate is completely melted.
Water bath: set the bowl in a pan of boiling water; stir
occasionally until melted
