Chocolate and ginger bliss balls
What you need
- Medjool dates 7 or 14 regular dates soaked in boiling water for 1 hour then drained
- Peanut butter 2 tablespoons
- Almonds 1/2 cup
- Crystalline ginger 8 pieces
- Dark cocoa 2 tablespoons
- Water 2 tablespoons
- Coconut 2 tablespoons
Preparation time: 15 minutes
Method
- Place all ingredients except coconut in a high speed blender and blend to a rough paste
- Using wet hands roll into balls and roll in coconut.
- Refrigerate in an airtight container.
Makes around 16 small balls
