Apple, Date and Cinnamon Muffins
What you need
- Self-raising flour 1 ½ cups.
- Wholemeal flour 1 cup.
- Baking powder 2 teaspoons.
- Rolled oats 1 cup.
- Cinnamon 2 teaspoons.
- Brown sugar ⅔ cup.
- Apples 3, peeled and diced finely.
- Dates chopped ½ cup.
- Trim milk 250ml.
- Eggs 2, lightly beaten.
- Vanilla essence 1 teaspoon.
- Unsweetened low fat yoghurt ½ cup.
- Canola oil ¼ cup.
- Topping:
- Brown sugar 1 tablespoon.
- Cinnamon 1 teaspoon.
- Rolled oats 2 tablespoons.
Preparation time: 10 minutes
Cooking time: 20 minutes
Method
- Preheat oven to 190°C.
- Place dry ingredients plus apple and sultanas into a large bowl.
- In a separate bowl, mix together the milk, eggs, vanilla, yoghurt and oil; add to the dry ingredients and mix well.
- Spoon into muffin tins, sprinkle with topping and bake for 15-20 minutes.
- Allow to cool for 5 minutes in their tins before turning out onto a wire rack to cool.
