Tomato, Lentil and Red Kidney Bean Soup

What you need

  • Chicken stock 6 cups.
  • Crushed tomatoes 2 x 400g cans.
  • Onions 1 large or 2 medium.
  • Orange lentils 1 cup.
  • Pasta spirals 1 cup.
  • Zucchini 2, sliced or chopped.
  • Carrots 2, sliced or chopped.
  • Celery 1 stick, chopped.
  • Red kidney beans 1 x 420g can, drained.
  • Chopped parsley and grated parmesan to serve.

Preparation time: 10 minutes
Cooking time: 35 minutes

Method

  • Place all ingredients, except red kidney beans in a large saucepan; bring to the boil, turn down and simmer for 30 minutes.
  • Add red kidney beans and heat for a further 5 minutes.
  • Serve topped with chopped parsley and grated or shaved parmesan.
