Tomato, Lentil and Red Kidney Bean Soup
What you need
- Chicken stock 6 cups.
- Crushed tomatoes 2 x 400g cans.
- Onions 1 large or 2 medium.
- Orange lentils 1 cup.
- Pasta spirals 1 cup.
- Zucchini 2, sliced or chopped.
- Carrots 2, sliced or chopped.
- Celery 1 stick, chopped.
- Red kidney beans 1 x 420g can, drained.
- Chopped parsley and grated parmesan to serve.
Preparation time: 10 minutes
Cooking time: 35 minutes
Method
- Place all ingredients, except red kidney beans in a large saucepan; bring to the boil, turn down and simmer for 30 minutes.
- Add red kidney beans and heat for a further 5 minutes.
- Serve topped with chopped parsley and grated or shaved parmesan.
