Pea Pesto
What you need
- Frozen minted peas 1 cup.
- Crushed garlic 1 teaspoon.
- Spring onion 1, sliced finely.
- Olive oil 2 tablespoons.
- Lemon juice 2 tablespoons.
- Grated parmesan cheese ¼ cup.
- Sweet chilli sauce 1 teaspoon.
- Salt and pepper to taste.
Preparation time: 10 minutes
Method
- Blend all together in a food processor or blender. It may be a bit stiff to start with but it gets softer as the peas thaw out. Very scrummy!
Makes around 1 cup
