Hearty Lentil Soup
What you need
- Olive oil 2 teaspoons.
- Onion 1 large, finely diced.
- Carrot 1, peeled and finely chopped.
- Celery 1 stalk, finely diced.
- Crushed garlic 2 teaspoons.
- Lean bacon 100g, diced and dry-fried.
- Chicken or vegetarian stock 2 litres.
- Chopped tomatoes 2 x 400g cans.
- Red lentils 1 cup.
- Salt and pepper to taste.
- Chopped fresh coriander or parsley to serve.
Preparation time: 15 minutes
Cooking time: 30 - 40 minutes
Method
- In a large saucepan, cook onion, carrot, celery and garlic together in oil for a few minutes until soft.
- Add all other ingredients except lemon juice and coriander and simmer for around 30 - 40 minutes or until lentils are cooked. Add coriander or parsley just prior to serving.
