Beetroot salad
What you need
- Fresh beetroot 400g, peeled and finely grated
- Carrot 1, peeled and finely grated
- Green apple 1, finely grated (not peeled)
- Red onion 1/2, finely chopped
- Olive oil 30ml
- Lemon juice 4 tablespoons
- Chopped coriander 3 tablespoons
- Salt and pepper to taste
Preparation time: 10 minutes
Method
- Mix ingredients together and serve. Top with a little extra chopped coriander
Serves 6-8 as a side salad.
Tip: Add fresh pomegranate seeds when they are in season
