Italian Meat Balls
What you need
- Lean minced beef 500g.
- Soft breadcrumbs (wholemeal if possible) 1 ½ cups.
- Rolled oats ½ cup.
- Cold water 2 tablespoons.
- Crushed garlic 1 teaspoon.
- Chopped parsley (optional) ¼ cup.
- Dried basil 1 teaspoon (or 2 tablespoons chopped fresh basil).
- Grated carrot ½ cup.
- Onion 1, finely chopped.
- Egg 1
- Garlic salt 1 teaspoon.
- Curry powder 1 teaspoon.
Preparation time: 15 minutes
Cooking time: 4 minutes in microwave, 25-30 minutes in oven
Method
- Preheat oven to 180°C.
- Mix all ingredients together in a bowl; shape into walnut sized balls and place in one layer on a microwave proof plate.
- Cover plate with plastic film and microwave on high for 4 minutes.
- Transfer to a baking dish, cover with a sauce and bake for around 25 minutes.
- Sauce: Mix a 400g can of crushed tomatoes with a jar of pasta sauce
- Mix 2 tins crushed tomatoes with 2 teaspoons of sugar and 1 teaspoon of dried herbs e.g. oregano, basil or Italian herbs.
- Mix a 400g can of crushed tomatoes with a 400g can of tomato soup.
Serves 4-6
