Chilli and Coconut Stir-fry
What you need
- Canola or sunflower oil 2 Tablespoons.
- Lean chicken beef or pork 500g, cut into strips.
- Minced garlic 2 teaspoons.
- Root ginger 1 teaspoon grated.
- Vegetables 6 - 8 cups chopped e.g. carrots, broccoli, onion, peppers, celery, mushrooms, cabbage, yams etc.
- Sauce:
- Sweet chilli sauce ¼ cup.
- Light coconut cream ½ cup.
- Soy sauce ¼ cup.
- Oyster sauce 2 tablespoons.
- Beef stock ½ cup.
- Cornflour 2 teaspoons.
Preparation time: 20 minutes
Cooking time: 15 minutes
Method
- Heat 1 tablespooon of the oil in a non-stick fry pan.
- Add meat strips and stir fry until cooked.
- Heat up a wok with remaining oil.
- Add ginger, garlic and vegetables and stir-fry on high heat for about 5 minutes.
- Mix sauce ingredients together and add to the vegetables along with the meat.
- Stir over medium heat until the vegetables are heated through and the sauce is thickened.
- Serve with rice.
