Red Lentil Dhal
What you need
- Oil 2 teaspoons.
- Onions 2 medium, chopped.
- Curry powder 1 tablespoon.
- Red lentils 1 cup.
- Stock or water 2 cups.
- Chopped vegetables 2 cups e.g. carrot, celery, peppers, zucchini.
- Chopped tomatoes 1 x 400g can.*
- Spinach or silver beet 1 cup, chopped (or use 100g frozen).
- Chickpeas (optional) 1 x 400g can, drained.
* Or use Watties Indian tomatoes and remove curry powder
Preparation time: 10 minutes
Cooking time: 25 minutes
Method
- Soften onion in oil; add curry powder and cook a few minutes longer.
- Add lentils, stock, chopped vegetables and tomatoes; cook for around 20 minutes or until lentils and vegetables are soft.
- Add spinach (and chick peas if using) and simmer for a further 5 minutes. Serve with brown rice.
