Tiramisu
What you need
- Toasted finely ground wholemeal breadcrumbs 1 cup.
- Brown sugar ⅓ cup.
- Drinking chocolate 5 tablespoons.
- Instant coffee powder 1 teaspoon.
- Brandy, rum or water 2 tablespoons.
- Cyclops coffee yoghurt 500g.*
- Cyclops unsweetened low fat yogurt 250g.
Preparation time: 15 minutes
Resting time: Overnight is best
Method
- In a small bowl, place breadcrumbs, sugar, drinking chocolate, instant coffee powder and alcohol, mix to combine.
- In a separate bowl, mix coffee yoghurt with plain yoghurt.
- In a glass serving bowl or individual glass serving bowls, place ⅓ of the crumb mixture in a layer across the bottom. Add ⅓ of the coffee yoghurt mixture, then repeat this layering 2 more times.
- Top with some extra drinking chocolate or some finely grated chocolate.
- Serve with fresh, tinned or frozen berries.
* If you cannot get coffee yoghurt, make a coffee syrup by heating together the following ingredients until thickened. Cool and stir through 500g plain unsweetened yoghurt.
- Instant coffee powder 2 tablespoons.
- Water ¼ cup.
- Sugar 2 tablespoons.
- Cornflour ½ teaspoon.
