Ice Cream Christmas Pudding
What you need
- Low fat vanilla ice cream 2 litre tub of.
- Toasted almonds ⅓ cup, chopped.
- Mixed peel ¼ cup.
- Raisins ⅓ cup.
- Sultanas ⅓ cup.
- Currants ⅓ cup.
- Prunes ⅓ cup chopped.
- Glace cherries ⅓ cup, quartered.
- Sherry, rum or brandy ⅓ cup.
Preparation time: Overnight soaking of fruit + 20 minutes
Freezing time: At least 12 hours
Method
- Put almonds, peel, sultanas, raisins, currants, prunes and cherries in a bowl with the alcohol; leave overnight.
- Place a 2-litre capacity pudding basin into the freezer to chill; line with glad wrap.
- Soften the vanilla icecream slightly and mix in the soaked dried fruit; spoon into chilled pudding basin and freeze for at least 12 hours.
- Just before serving, turn out onto a plate and decorate with berries.
