Cheat’s Trifle
What you need
- Sponge roll with jam 1.
- Canned fruit e.g. boysenberries or fruit salad 1 x 400g can.
- Commercial (ready-to-go) custard 2 cups.
Preparation time: 10 minutes
Resting time: at least a few hours
Method
- Cut sponge roll into thin slices; place ⅓ in a layer in a suitable trifle bowl. (Glass works well here)
- Top with a layer of tinned fruit or berries, then a layer of custard
- Repeat layering until all the ingredients are used, finishing with a layer of custard.
Serves 6
Note: While this recipe is healthier than a traditional trifle (made with cream) it is still high in sugar and low in fibre. Keep portion size small and have only occasionally.
