Banana and raisin bran muffins

What you need

  • Self-raising flour 2 cups.
  • Unprocessed bran 2 cups.
  • Raisins ¾ cup.
  • Bananas 3, mashed.
  • Baking soda 1 teaspoon.
  • Trim milk 1 ½ cups.
  • Margarine 50g.
  • Golden syrup or maple syrup 6 tablespoons.
  • Eggs 2, lightly beaten.

Preparation time: 10 minutes
Cooking time: 15-20 minutes

Method

  • Preheat oven to 190°C.
  • Place first 5 ingredients in a bowl.
  • Dissolve baking soda in milk.
  • Melt margarine and golden/maple syrup together in microwave or in a small saucepan and add to dry mix with milk; mix until blended.
  • Do not over mix as this will toughen the mixture.
  • Spoon into non-stick muffin pans (¾ fill); bake for 15-20 minutes or until skewer comes out clean.
  • Cool in tray for around 5 minutes then remove onto wire rack.

Makes 12 medium or 24-30 mini muffins
