Apple, Date and Cinnamon Muffins

What you need

  • Self-raising flour 1 ½ cups.
  • Wholemeal flour 1 cup.
  • Baking powder 2 teaspoons.
  • Rolled oats 1 cup.
  • Cinnamon 2 teaspoons.
  • Brown sugar ⅔ cup.
  • Apples 3, peeled and diced finely.
  • Dates chopped ½ cup.
  • Trim milk 250ml.
  • Eggs 2, lightly beaten.
  • Vanilla essence 1 teaspoon.
  • Unsweetened low fat yoghurt ½ cup.
  • Canola oil ¼ cup.
  • Topping:
    • Brown sugar 1 tablespoon.
    • Cinnamon 1 teaspoon.
    • Rolled oats 2 tablespoons.

Preparation time: 10 minutes
Cooking time: 20 minutes

Method

  • Preheat oven to 190°C.
  • Place dry ingredients plus apple and sultanas into a large bowl.
  • In a separate bowl, mix together the milk, eggs, vanilla, yoghurt and oil; add to the dry ingredients and mix well.
  • Spoon into muffin tins, sprinkle with topping and bake for 15-20 minutes.
  • Allow to cool for 5 minutes in their tins before turning out onto a wire rack to cool.

Makes 12 standard muffins
