Dried Fruit Compote

What you need

  • Dried apricots 1 cup.
  • Dates 1 cup.
  • Raisins ½ cup.
  • Water 1 cup.
  • Grated rind and juice 1 lemon.
  • Honey or sugar 2 tablespoons.

Preparation time: 5 minutes
Cooking time: 5 minutes

Method

  • Place all ingredients in a small saucepan and bring to the boil; reduce heat and simmer uncovered for about 5 minutes or until syrup has thickened slightly.
  • Delicious served with yoghurt, pancakes, French toast, cereal or porridge.
